Shamli is a major agriculture-based and historic district of western Uttar Pradesh, established in 2011. As part of the National Capital Region, it holds considerable industrial and commercial importance. The district is renowned across India for its fertile land, extensive sugarcane cultivation, and jaggery and sugar industries. Mythological sites associated with the Mahabharata period and memories of the First War of Independence of 1857 enrich Shamli’s cultural and historical identity. Under the One District One Cuisine Programme, Palang Tod Mithai, Gur Aadharit Utpad, and Chaat have been selected for Shamli district.

Shamli’s Tikki Chaat is known for its crispness and spicy, tangy seasonings. The Tikki is slowly roasted in pure ghee on an iron griddle for an extended period. The best-known versions are available along Hanuman Dham Road and in Sadar Bazaar.

Shamli’s Palang Tod Mithai is renowned for its extraordinary richness, which inspired its memorable and playful name. Milk is simmered for hours until thick and caramelised, then blended with sugar, ghee, and dry fruits to create a dense, indulgent sweet. Its intense milky flavour and melt-in-the-mouth texture have made Palang Tod a distinctive speciality of Shamli.

Shamli forms part of the sugarcane-growing belt. Its Masala Gur, Shakkar, sesame Chikki, and sugarcane Kheer are prepared without chemicals using natural and traditional methods. Kairana town, the sugarcane-processing units along Kandhla Road, and Shamli’s grain market are particularly famous for these pure products.
