Jhansi is a famous historic city of Uttar Pradesh situated in the Bundelkhand region. The city is particularly renowned for its role in the Indian freedom struggle of 1857, when its ruler, Rani Lakshmibai, fought courageously against the British. Her sacrifice remains a symbol of bravery in Indian history. The city’s economy is based on agriculture, industry, and tourism. Jhansi is also known for its historical heritage and peaceful environment. Under the One District One Cuisine Programme, Balushahi and Dal Bafla have been selected for Jhansi district.

Believed to have gained popularity in North India during the Mughal era, Balushahi later became an important part of Bundelkhand’s festive food tradition. Jhansi’s Balushahi is traditionally fried in pure ghee over a slow wood fire and dipped in fragrant sugar syrup, giving it a crisp exterior and a soft, delicately layered centre. For decades, Manik Chowk and Sipri Bazaar have been renowned centres of Balushahi-making.

This traditional dish of Jhansi and the Bundelkhand region is known for its nutritional value and rich taste. Small dough balls known as Baflas are prepared from coarse wheat flour mixed with ghee, carom seeds, and turmeric. They are cooked and served with thick and spicy urad dal, chana dal, or Panchmel Dal, further enhancing the dish’s flavour.
