Hathras is a prominent district of Uttar Pradesh, distinguished by its rich commercial traditions, agriculture-based economy, and asafoetida-processing industry. The district is regarded as an important centre for the trade and distribution of Hing, or asafoetida, in India. It is therefore also known as“Hing Nagari” — the City of Asafoetida. Agriculture and market-based trade form the principal foundations of its economy. Influenced by Braj culture, Hathras has a social and cultural environment enriched by folk songs, traditional festivals, and religious beliefs. Local entrepreneurship, traditional trading networks, and small-scale industries have provided a strong foundation for the district’s economic activities. The balanced combination of cultural heritage and commercial activity gives Hathras a distinctive place among the important districts of western Uttar Pradesh. Under the One District One Cuisine Programme, Rabri has been selected for Hathras district.

Hathras has carried forward its traditional Rabri-making craft for generations. Prepared by slowly simmering milk for hours and carefully layering the cream, it develops a rich flavour and luxuriously thick texture. This patience-driven preparation and authentic taste have made Rabri a celebrated part of Hathras’s culinary heritage for more than half a century.
