Farrukhabad is one of the largest centres of potato production and trade in northern India. Situated on the banks of the Ganga River, the district is famous for traditional Zardozi embroidery on garments and hand-block printing. It was historically a part of the ancient Panchala Kingdom. Under the One District One Cuisine Programme, Dalmoth and Bhune Aloo have been selected for Farrukhabad district.

Farrukhabad’s Dalmoth is believed to trace its roots to the district’s Nawabi era, when savoury mixtures became a popular accompaniment in royal and local kitchens. Prepared with crisp fried lentils, fine Sev, potato flakes, asafoetida, and aromatic spices, it is renowned for its crunchy texture and distinctive tangy flavour.

Farrukhabad’s Bhune Aloo are particularly popular in Fatehgarh, Kamalganj, Kaimganj, and the city’s local markets and Haats. Prepared with mustard oil and indigenous spices using the traditional method of slow roasting, these potatoes are aromatic and flavourful.
