The word Ghamanja means a mixture or a combination of everything in one preparation. Balrampur’s Ghamanja is a spicy and tangy mixed Chaat that is extremely popular locally. It is prepared by mashing or roasting boiled potatoes and peas and adding lemon juice, green chutney, spicy-sweet Saunth, finely chopped onions, and fresh coriander. It is served hot.
